What could be more festive than cookies? Jewel tone, holiday cookies that are healthy and meant to be eaten in the morning! Try this super easy recipe with your favorite morning beverage for a super easy breakfast before heading out to finish your holiday shopping or heading out for family visits!
Servings: 24 cookies
Ingredients
- 1 cup Oats Gluten Free or Regular
- 3/4 cup Whole Wheat Can Sub Gluten Free Baking Mix
- 1 1/2 tsp Baking Powder
- 1 tbsp Cinnamon
- 1/4 tsp Ground Cloves
- 1/4 tsp Ginger
- 2 tbsp Coconut Oil melted
- 1/4 cup Unsweetened Applesauce
- 1 tsp Vanilla
- 3/4 cup Honey
- 1/2 cup Cranberries, chopped
- 1/2 cup Pepitas (Pumpkin seeds)
- 1/2 cup Unsweetened Shredded Coconut
- Zest of 1 Orange
- Juice of 1 Orange
Instructions

1.Preheat oven to 325. Zest and juice orange, set aside.

2.Mix Oats, GF Flour, Baking Powder, Cinnamon, Cloves, and Ginger until combined. Add Applesauce, Vanilla, Orange Juice, Orange Zest, Honey, and Coconut Oil mix on low until dough forms. Add Cranberries, Pepitas, and Shredded Coconut. Chill dough for 30 minutes.

3.Use a tablespoon measuring spoon to spoon cookie dough onto parchment lined cookie sheet.

4.Bake for 12 to 15 minutes. Allow cookies to cool for 5 minutes on the cookie sheet and then transfer to a cooling rack.
