Combine taco night and pasta night with a mash-up of the two in this easy 5-ingredient recipe. Try topping this cheesy dish with your favorite taco toppings.
Ingredients
- 1 (16 oz) pkg rotini
- 1 lb 93% lean ground beef
- 1 (1 oz) packet less-sodium taco seasoning
- 1 cup jarred salsa
- 1 ½ cups shredded pepper Jack cheese, divided
Steps
1. Bring a large pot of salted water to a boil on high. Cook the rotini according to package directions until al dente. Drain well and set aside.
2. Meanwhile, in a greased oven-safe 12-inch skillet, cook the ground beef 8–10 min., until fully cooked, stirring and breaking up beef with back of a spoon, until fully cooked. Season with salt and pepper.
3. Add the taco seasoning and ½ cup water to beef. Simmer 2–3 min., until water is mostly absorbed. Add cooked pasta, salsa, and 1 cup shredded cheese to beef mixture. Stir until cheese is fully melted. Remove skillet from heat and top with remaining ½ cup cheese. If desired, broil 1–2 min., until cheese is melted. Serve immediately.
